What the?
Ingredients
For the peach filling:
1/4 cup brown sugar
1/4 cup white sugar
1/2 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon salt
10 cups frozen peaches, thawed, about 3 pounds prepared
1 teaspoon cornstarch, dissolved in 1 tablespoon water
1 lemon, juiced
1 teaspoon butter
For the crumb topping:
3/4 cup brown sugar
1/4 cup sugar
3/4 cup all-purpose flour
3/4 cup oats
1/4 cup slivered almonds
1/2 cup dried cranberries
1/2 teaspoon freshly grated nutmeg
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 stick unsalted butter, room temperature, cut into 8 pieces
Vanilla ice cream or whipped cream, for serving
Special Equipment: 12 by 8-inch oval stoneware dish or 13 by 9-inch rectangular glass or stoneware dish
Directions
Preheat oven to 450 degrees F.
To make the peach filling: In a large bowl, stir together sugars, flour, cinnamon and salt. Add peaches and gently toss to coat. Mix together cornstarch slurry and lemon juice and stir into peaches to incorporate. Butter a 12 by 8-inch oval dish and add peach mixture.
To make the crumb topping: In a medium bowl, combine dry ingredients, add in butter pieces and combine with hands until crumbly.
Top peaches with half of the crumb topping. Place in oven and immediately reduce oven temperature to 350 degrees F. Bake uncovered for 30 minutes, then add remainder of the crumb topping. Reduce heat to 325 degrees F and bake until golden and bubbling, another 45 minutes. Remove from oven and let sit for 15 minutes before serving.
Serve with vanilla ice cream or fresh whipped cream.
So yummy right out of the oven or zapped for just 30 seconds in the microwave!

We have a roof....
Chris Schuch has been there to help quite a bit - so have several other neighbors including Jerry Kostal, Joe Pechous & Jim Fillaus!
This will eventually be part of our master upstairs suite! I am so looking forward to that! Although I would feel better about living up there once the floor is on and everything is enclosed. I have never gotten to live "upstairs" before...always wanted to! My room was either on the main floor or int he basement!

Catching Up!
Not sure if you heard...but the house we were working so hard on had a bit of a disaster June 22nd. We are still waiting on insurance to get started again!

Just a 3 weeks after our wedding - the Sedlacek Family grew again adding Tim Souhrada!
I spent part of the 4th of July weekend in Bloomfield with the Bratetic family - and I got to do Marshalls hair!

Godmama Ernie
Marshall, Dee and I spent the day Saturday in Sioux City doing some Independence shopping! Marshall really enjoyed Victoria's Secret where he found some pretties of his own!
I was nice enough to bring Marshall some fireworks to play with too! His favorites are the party poppers and the snaps! When Dee & Loren set off the bigger fireworks Marshall would say "Bang Mommy, Bang! Bang Daddy, Bang!" He is just too funny!
He also now calls me Ernie - plain as day! It started off as Ern...and he added the "e"! Dee likes to encourage it - so I may be Auntie Ernie from now on!
View From My Game Camera
I set up a game camera in February to try to catch whatever was leaving very LARGE tracks in my snow. I forgot that I left it out there and 4 months later - I have compiled a gallery of photos of all the activity I miss but my camera caught! There were over 380 pictures - most of nothing but the trees (since the wind activated the camera a few times) so I choose the ones with critters and you can see them HERE!

17 Days Remain
The cake, buns & flowers have been ordered. Everyone has been fitted - with my last fitting next week! The food that can be purchased has been taken care of and Grandma Tycz has lined up the Fr Cronin center kitchen for the preparation of all the food just days before the big event. Grandma Wagner is fresh back from Italy and already volunteering to help boil nearly 100 lbs of potatoes!
We met for our last marriage class last night - and I cried and cried. Good tears, sad tears and nervous tears. It was so overwhelming being in the church all by ourselves realizing the undertaking we are about to make... and one neither of us takes lightly.
I want to thank you all for thinking of us and caring about our big day and our little lives! We really appreciate all the thoughtfulness and willingness to help. Be careful - I will most likely be taking you up on it if you keep putting the offers out there!
